Put in a large crockpot the following:
6 medium-sized pieces of chicken, which should include the skin and bone.
4 leeks (or more), cleaned and sliced
2 big garlic cloves, sliced
1 small bunch parsley, cut up
a handful of baby carrots
about 1/4 cup barley which has been soaked overnight
rosemary oregano basil 2 bay leaves
enough chicken broth to fill to within an inch of the top of the crockpot (I use low-salt broth and do not add salt)
Put the lid on, plug in the crockpot, and come back after at least 6 hours. The kitchen will smell wonderful all day.
