The last time I bought applesauce for a side dish (as opposed to an ingredient) I discovered that the store offered me two choices: unsweetened applesauce (which I consider bland) or sweetened applesauce (full of high fructose corn syrup; nary a grain of plain ordinary sugar in sight). I chose the first option, but the next time this subject came up, I did the following:
4 Granny Smith applies, peeled, cored, and sliced 1 cup water
Put in a reasonable-sized saucepan, bring to a boil, turn it down, and simmer, covered, 10-12 minutes.
Stir it, turn it off, and let it sit 10 minutes, still covered.
Drain and reserve the liquid. (Although it contains no added sweetener of any kind, it is sweet and flavorful. I just pour it into a cup and sip it while it's warm.)
Add 3 tbsp brown sugar, a dash of salt, and as much cinnamon and/or lemon juice as you want. Stir until the sugar is dissolved. Refrigerate. Makes approximately 2 cups.
