Just had this for lunch and it's probably the best sandwich I've eaten, not made by Jimmy John's (semi fast food place).
One can of tuna 1-2 slices cheddar cheese (I prefer the sharpest possible cheddar, but your choice) 1 teaspo on pesto pita bread/pocket thingy
I added onions, lettuce and tomato (all from my garden, so very fresh). Most of you have the basic concept of making a sandwich, so I'll suffice it to say throw it all together, eat and enjoy.

Nice... Jimmy John's is pretty awesome. I love the Beach Club sandwich. Something about turkey, avocado and sprouts mixes very well to me.
I make my tuna similarly, except I use relish instead of pesto. I squeeze/drain the !@#$ out of the tuna in the can first to get out that fishy water, fluff it with a fork, add mayo and relish, serve in a pita w/lettuce and tomato and white american cheese, on bread with the same toppings, or on top of a garden salad.
I envy your fresh produce from your garden. I bet that adds a nice amount of fresh taste to everything.
